Gourmet Day: Castilla y León

We continue exploring the world’s gastronomy, and this time we’ve made a stop in Castilla y León. This region is recognised as a cultural heritage site due to its long historical tradition and boasts architecture that reflects the different eras it has experienced.  

The cuisine of Castilla y León stands out for its traditional Spanish dishes made with high-quality ingredients. Its roasted meats, cured sausages (“embutido”), distinctive suckling pig (“cochinillo”), and hearty stews are particularly famous.  

On this occasion, we enjoyed a delightful menu: delicious “Patatas Revolconas” (smashed potatoes) with roasted red peppers and baked pork cracklings, Pickled chicken with vegetables, including onions, carrots, courgettes, and peppers, served with a side of Pisto (a tomato, courgette, aubergine, and pepper stew), and “Pastel de Yema”, a sponge cake layered with cream and burnt egg yolk topping, a traditional recipe originating from the monks of León.  

A perfect menu to discover the traditional dishes of Castilla y León and to fight off the chill of these colder days.
